Pecan Blondies


This is one of my favorite ways to use pecans.


2 cups chopped pecans

3/4 cup all purpose flour

3/4 cup defatted pecan flour

2 cups packed brown sugar

4 eggs

1 tsp vanilla

3/4 cup pecan oil

1 tsp salt


Heat over to 350 degrees. Use non stick spray on a 9x13 baking pan. Add eggs, sugar and vanilla to mixing bowl. Mix for approximately 2 minutes until smooth. Mix in oil and salt. Then add flours. Fold the pecans in to the mixture. Pour into prepared baking dish and bake 30-40 minutes. Center should be set and blondies should be brown at the edges. Makes 24 squares. Store in air tight container at room temperature. Mine lasted a day and a half before they were all eaten. Enjoy.
